Paddlefish caviar

Paddlefish caviar has glossy and clear roe that ranges in color from gray to a golden gray. It has a buttery flavor, similar to Beluga, and therefore often is a substitute for this much more expensive variety. Paddlefish is often sold under the marketing moniker of American caviar.
