Sevruga caviar
Sevruga caviar, harvested from the Stellate sturgeon, has the smallest roe of the three primary caviar varieties. In addition, the Stellate sturgeon is more common, in the wild, and therefore Sevruga is the least expensive of the three. The roe of the Sevruga is light gray and has a buttery flavor, like Beluga, but is saltier and has a richer and greater intensity of flavor.
